Bain Maries

These hot food tables offer you the flexibility of electric or gas, and waterbath, sealed well or open well heating. Individual controls give you the specific heating that you need for each hot food well. Heating elements and controls are accessible through the control panel.

The FR mounts easily to the underside of a holding vessel, leaving the entire vessel area free. Water is continually circulated to avoid any “cool” spots. The unit controls water temperature from 140°F (60°C) to 190°F (88°C).

The bain-marie wells to drop-in exist in 2 versions: wet bain-marie and ventilated-air bain-marie.
The bain-marie wells to drop-in give a large capacity of presentation and ensure optimised temperatures for your products.
VENTILATED-AIR BAIN-MARIE
Thanks to the optimised conception of the air-flow in the well, the Vauconsant ventilated-air bain-marie wells reduce the energy consumption by around 40% compared to a traditional bain-marie.
WET BAIN-MARIE
Automatic water filling of the well
The bain-marie wells to drop-in are designed to hold up to 6 GN1/1-150mm containers (not supplied).
Temperature regulation in the well is by thermostat with control indicator. Protection against overheating is by use of a safety thermostat.
