The Online Architecture and Design Exhibition
A built-in oven fits into a kitchen wall niche, cupboard or piece of furniture designed for the purpose, which should be made of heat-resistant materials, such as treated wood, stainless steel or stone. Both gas and electric models are common, some with a cooling system.
Such ovens are found in homes, restaurants and food service outlets.
Conventional models use unassisted hot air convection to cook food. They have burners or similar elements above and below. The convection oven uses a fan to force hot air over the food, heating more evenly and reducing cooking time and temperature.
Choice will depend on available space, oven capacity, intended use (home or commercial) and individual preferences. Demanding cooks should consider a convection model. Cleaning may be manual or catalytic or pyrolytic self-cleaning.
