Automatic machine for the production of alimentary pastry, fitted with a single or double kneading basin, suitable to feed formar machines for cappelletti, ravioli, tortellini and cutters.
The machine is completely made in stainless steel, with internal sides completely opening for a deep cleaning and safety. The external sides, were are placed frictions bearings, are far from the contact with pastry. All the functions are ruled by single motoreducers. The safety devices are according to the running laws.

This machine has been manufactured to obtain desired thickness of pasta sheet or pizza bases. it is very simple to use and extremely practical.
As a matter of fact, a small handle is regulable just to obtain different pasta thickness. fresh pasta can be rolled out in width of 22 - 25 - 32 - 40 -50 cm.
The machine’s structure is built in stainless steel. upon request, it is possible to have both special wooden rollers or stainless steel rollers.
Our roller machine has been projected with safety systems and low-voltage controls at 24 v and excellent finishing standards.

Apex Reversible Dough Sheeter

The LAM line of Reversible Sheeters were specifically designed with the particular consideration for use within small bread-pastry bakeries, hotels and restaurants.
Dimensions of the mahcine are quite compact, more so when the machine is in its storage position.
When finished using the machine, the conveyor tables can be raised up into a resting position, thereby occupying less space within the work area.

Manual sheeter with conveyor belt on mobile base SF
The SF manual sheeter enables any type of dough to be turned and pinned.
A particular attention has been paid to the conception and the carrying out of their main parts to grant very good productions and excellent quality of rolling, fine, precise and always regular.
The large diameter of the two rolling cylinders (80 mm) grants a better dragging of dough avoiding is sticks to them.
The rolling thickness is very wel l cont roll ed thanks to the easy adjust ment of the rolling cyl inders by means of : a control lever opening and closing them, a endless adjustment hand wheel and graduated scale, clear and easy to read, for
the manual sheeter ; a computer able to manage up to working programmes settable by customers and early cycle end device for the semi-automatic sheeters.
The automatic insertion of the differentiated speed between the entry and the exit conveyor belt, the first one 35% slowed in comparison to the second one, avoids possible dough obstructions, stretching and tearing at the rolling entry.

With roller separation fully adjustable between 0" and 1 3/8", they efficiently sheet almost any type of dough to the desired thickness, for flexibility in preparing a wide variety of products.

Regardless of the direction, the leading conveyor moves slightly faster than the feed conveyor, gently stretching the sheet for wrinkle free results. Conveyor direction is reversed using the floor pedals or convenient knobs that permit both left and right handed operation. Calibrated and highly polished, the 24" chrome-plated cylinders deliver smooth sheets of dough that reel onto removable wooden rolling pins. Shielded cylinder bearings prevent contamination.
Safety features include electrical interlocks that prevent accidental operation. Roller scrapers are removed in seconds for daily cleaning. The tables can be folded upright or removed entirely from the wheel-mounted base for space saving storage and easy movement.
