Cook, Hold, and Smoke all in one larger capacity oven. Single compartment oven with a 20 gauge stainless steel exterior. 360 pounds (163 kg) maximum capacity. Holds thirty (30) 12" x 20" (GN 1/1) pans or sixteen (16) 18" x 26" sheet pans.
Microprocessor control with easy to read LED displays remaining time and a full range of operating parameters. Cook time adjustable up to 24 hours, smoke time adjustable up to 4 hours. Eight programmable menu buttons simplify operation while still being able to use the manual button to set individual programs. All programming can be used with food probes to sense and display internal product temperature, or without probes with a display of internal oven temperature.
