Balanced refrigeration system holds product between 33 and 38 degrees F for a high humidity dough retarder environment. Cabinet features Cold-Air Blanket design. Barrier duct design prevents spillage from getting into interior from top of cabinet. Insulated lids are standard. Cabinet exterior is stainless steel and interior is anodized aluminum. |
