Commercial automatic dough sheeter
A reliable and solid machine easy to use thanks to the technology that provides flexibility for the production of various breads: bocconcino, mantovana, "banana", French stick, baguette, zoccoletto and ciabatta.
The rotary dough divider with its large hopper allows processing of both soft and hard dough, rolled or otherwise. With the special rolling and combined disc-guillotine cutting system, it is possible to work with 1-2-3-4-5 rows. Weight, thickness and production parameters are controlled by a PLC with memory for 50 recipes.
The first 650 mm wide moulder with 4 rollers can be by-passed for special shapes like ciabatta and zoccoletto. The conveyor belt can be fitted on request with reversible drive for the combination with a dough rounder or other machines.
The adjustable second moulder 650 mm wide moulder with 4 rollers is fitted with a variable speed infeed belt to allow alignment of dough pieces and has an automatic tray feeder for 15
60x80 cm trays. The PLC allows use of trays with any number of channels. A range of optional features is available for special processes and combinations, such as the hopper with flour duster and motorized lateral belts, placing onto trays of cut portions, allignement system to be combined with dough provers, second dough moulder with motorised pressure plate for French stick. The standard machine is supplied with cutting device for 1 row plus 3 combinations of the remaining number of rows.
