We recommend starting with small pieces to get the fire going and the temperature to rise faster, then adding larger pieces to maintain temperature while cooking. Air flows through the bottom of the structure into the fire container, which has holes around the bottom. Air also circulates between the fire container and the outer structure, so the latter does not become too hot.
