BM/8 - PORTIONING MACHINE
The BM/8 PORTIONING MACHINE is able to divide into exact portions a dough for pizza, panification and similar products. Thanks to three different extrusion cones with predetermined weight in grams, the range of the obtainable sizes goes from 60 up to 900 grams. This machine is a necessary tool in pizza restaurants and especially in the industrial field thanks to its precision, easiness in use, quantity and quality of the work. The dough progress motion is carried out by a slow motion spiral, which reduces as much as possible the dough stresses occurred during the processing stage. The dough is cut and divided into portions by a blade, through a light-sensitive sensor and the complete filling of the constant section part, at the end of the extrusion cones in use. To grant safety conditions during any working phase, special sensors immediately stop the machine in case of unintentional opening of the inlet hopper or access to elements in motion. Moreover, in order to comply with the relevant requirements, the portioning machine is built according to these specifications and it is made of materials suitable for food processing machinery. |

The Dutchess LD-626 Dough Divider is simple to operate, and very accurate. The removable divider head assembly can be cleaned daily, either by hand washing, or by placing into a dish or pan washer. Instructions for removal of the divider assembly are found inside the manual provided. Removal takes only seconds, and without the need for tools.
This Dough Divider will divide a single large piece of dough into 12 equal pieces, the weight of each piece being determined by the weight of the large piece placed into the pan initially.

PORTIONING AND ROUNDING:
The volumetric Dough Divider and Rounder BM/2/AS is a complete
equipment to make portions and automatically round the dough mixing loaf.
The BM/2/AS is the first making and rounding machine with a continuous
process, designed for pizzerias with cooled loaf leavening. You can introduce up to 30-35 kg unleavened dough in the top hopper and
choose the appropriate cone and bell according to the wished weight, the
obtained portions are well dosed and rounded, ready for the following
leavening phase. The loaf weight can be between 50 and 300 gr. with a
maximal tolerance of 10%. The BM/2/AS is delivered with a standard
equipment of 3 cones and 2 bells to be chosen from a list.

Flexi Moulder - The Flexi - two bread moulders in one.
MONO's Flexi Moulder combines all the features of a French Stick Moulder and conventional bread moulder into one machine, whilst retaining the excellent moulding properties these two machines offer.
Features :
The Flexi Moulder takes up much less space than separate moulders for French and English bread and requires less manpower, cleaning and servicing.
All of its controls are at the front and servicing can be carried out from either side of the machine.

The AS/8 rounding machine is able to round dough loafs from a minimum of 180 g to a maximum of 800 g of product; its average output reaches 900 portions/hour; for this reason this machine can be considered necessary in pizza restaurants and especially in industrial structures or baker's shops for home made loafs. Its functioning is very easy: the screw feeder has to be turned on then the portions can be inserted in the inlet and collected already rounded and ready to leaven, at the outlet at the opposite side. It is easy to open, inspect and clean thanks to its comfortable lateral protections with special grips. It is a "universal" equipment, since in case of different weights in grams, there is no need of modifications or changes of the tool. The structure is sturdy and has small overall dimensions, it consists of a combination of certified building materials: the elements in
contact with the dough are suitable for food, as required.
