Construction and insulationAll food-contact parts are stainless steel (EN 1.4404). The kettle is insulated with reflective foam for up to 90% energy efficiency. Optionally, closed-cell polyurethane foam insulation is available for additional bowl strength and seamless welding of bowl covers.
Control panelThe large electromechanical control panel is ergonomically raised and protected to IPX5. It provides temperature and mixer controls with simple turn-and-select operation. Optional factory-installed features are available for an extra charge.
Heating functionTemperature range 0°C…120°C with 1°C setting accuracy within the steam jacket. Maximum operating pressure 1.0 bar (corresponding to +120°C in the jacket).
InstallationViking 4G kettles can be surface- or subsurface-mounted to the floor using installation frame kits (option) or ordered as free-standing (FS option) for quick delivery and setup without drilling. Multiple units can be grouped, sharing a central control pillar to save space under the canopy.
Mixer featuresMaintenance-free, strong auto-reverse mixer for mixing and whipping. Heavy-duty mixer version available for higher loads. Two-directional mixing tool mounts at the bowl bottom with automatic reversing to ensure gentle but thorough mixing even at low speeds. Mixer seals are positioned above the food level to prevent leakage into the motor. The mixing tool is removable and fitted with easy-to-clean Teflon scrapers. Step mixing speed adjustment range 20–120 rpm. The mixer locks when the kettle is tilted, allowing mixing during decanting. The mixer stops in under one second if the lid is opened.
Pre-programmed mixing programs- Soups: gentle stir-and-rest mixing cycle
- Sautéing meat/vegetables and mashed potatoes: powerful back-and-forth mixing cycle
Tilting functionsElectric tilting operates at the press of a button. Pouring spout height to floor is 600 mm, compatible with decanting trolleys.
Occupational safetyMixing stops in under one second when the lid is opened. Opening the lid during a mixing program triggers an alarm and displays an active timer. The kettle tilts only by deliberate button operation. Mixing with the lid open while the kettle is upright is prevented per safety regulations.
Automatic food water filling (option)Automatic food water filling operates by button control. Water can be filled directly through the safety grid lid, usable also while tilting to rinse pasta or rice.
Hand-shower options (option)- S1 – standard hand-shower
- S2 – heavy-duty hand-shower
- S3 – recoiled hand-shower
Automatic jacket water filling (option)Automatic jacket water filling reduces manual work when frequent jacket water changes are required (e.g., cooling).
Cooling optionsC1 Tap water cooling (requires hand-shower S1 or S2): open-circuit tap-water cooling manually connected; does not reduce water temperature below incoming tap water.
C2 Tap water cooling (option): open-circuit tap-water cooling automatically controlled via the kettle; uses incoming tap water and does not reduce temperature below incoming tap water.
Decanting / pumping (option)Can be fitted with a D1 tangent draw-off tap or D2 connection for pump-fill systems.
